2 large fennel bulbs with fronds
2 large lemons
3/4 – 1 lb dubliner cheese (aged white cheddar or parmesan can be used)
2 Tablespoons olive oil
2 large pinches grey sea salt (to taste)

Oh Mia…..I tried making this salad and it was delicious! Problem is, I can’t use a mandolin like you do. My salad isn’t nearly as beautiful as yours….:(
I’m glad it was delicious! But cooking doesn’t always have to be beautiful…rough cuts are just as good!
