Scallion Longevity Noodles

In Chinese culture, eating long noodles is a sign of longevity. Based on how many times I have devoured a bowl of these noodles, chances are I’m going to live to 100! This recipe calls for oyster sauce, something similar to thick sweet soy sauce, which is more and more commonly found in most supermarkets in the Asian foods aisle.  Hoisin sauce would be a substitute if you can’t find it. This one pot meal is a crowd pleaser in my family…my 2 year old can’t seem to get enough of them. Enjoy!
